I made these cupcakes for our church Youth Group bake sale. They are easy to make and delicious!! The recipe makes 24 - I only needed a dozen so my neighbors got to indulge!! Ingredients 3/4 cup butter, softened 2 1/2 cups sugar 3 eggs 1 15oz. pumpkin 2 1/3 cups flour 1 TB pumpkin pie spice 1 tsp baking power 1 tsp ground cinnamon 3/4 tsp salt 1/2 tsp baking soda 1/2 tsp ground ginger 1 cup buttermilk Frosting 8oz cream cheese, softened 4 cups confectioner's sugar 1 tsp vanilla extract 2 tsp ground cinnamon Instructions Preheat oven to 350 degrees In a large bowl, cream the butter and sugar until light and fluffy Add eggs, one at a time , beating well after each addition Add pumpkin and mix well Combine the flour, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger and add to the sugar & butter alternately with the buttermilk - make sure to beat well after each addition Fill 24 paper-lined muffin cups 3/4 full.
