Pumpkin Spice Cupcakes with Cinnamon Cream Cheese Frosting

  I made these cupcakes for our church Youth Group bake sale. They are easy to make and delicious!! The recipe makes 24 - I only needed a dozen so my neighbors got to indulge!!  Ingredients 3/4 cup butter, softened 2 1/2 cups sugar 3 eggs 1 15oz. pumpkin 2 1/3 cups flour 1 TB pumpkin pie spice 1 tsp baking power 1 tsp ground cinnamon 3/4 tsp salt 1/2 tsp baking soda 1/2 tsp ground ginger 1 cup buttermilk  Frosting 8oz cream cheese, softened 4 cups confectioner's sugar 1 tsp vanilla extract 2 tsp ground cinnamon Instructions Preheat oven to 350 degrees In a large bowl, cream the butter and sugar until light and fluffy Add eggs, one at a time , beating well after each addition Add pumpkin and mix well Combine the flour, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger and add to the sugar & butter alternately with the buttermilk - make sure to beat well after each addition Fill 24 paper-lined muffin cups 3/4 full. Mexican Street Corn

  I've modified this recipe based on my family's tastes. Here is the link to the original recipe I follow: https://www.loveandlemons.com/mexican-street-corn-salad/ Below is what I do:  Ingredients:  4 cans corn - whole kernel (drained) 6oz feta cheese 3 garlic cloves - minced 2TB jalapeno, finely chopped 4 TB mayonnaise 1 tsp chili powder juice from half a lime salt & pepper to taste Instructions Add olive oil to skillet over medium heat. Add corn and let cook until corn starts to char. Stir often - will take about 10 minutes In a large bow, mix together mayonnaise, cheese, lime juice, peppers, garlic & chili powder. When corn is done, fold it into other ingredients. Taste for seasoning. Add salt & pepper to your taste.  You can serve it immediately or put it in the fridge for when you are ready to enjoy. 

Italian Pasta Salad

  Ingredients :  Rotini pasta noodles Grape tomatoes Black olives Green pepper, sliced  Pepperoni cut in 4ths  Mozzarella cheese cubes shredded parmesan cheese Italian Dressing - I use a full bottle of Olive Garden Italian Dressing  Instructions: Boil noodles according to package While noodles are boilings, slice up green pepper, pepperoni, cheese You can slice the tomatoes in half if you wish, I've made this multiple times and sometimes I cut them, sometimes I don't Let the noodles cool down a bit and use half the dressing on the noodles and mix it up Then add the other ingredients and use the rest of the bottle of the dressing and mix it up You can either serve right away or put it in the fridge for a bit. I've made this the day before a picnic and it is pretty good cold

  For Father's Day this year, I made my husband's favorite breakfast food.
