Ranger Cookies
My daughter and I baked these cookies the other day. She was so excited to help Mommy in the kitchen. These turned out so great!! Super simple to make and tasted amazing!! I used a hand mixer which turned out fine but I think next time I'll use my big mixer with the paddle. It's just easier!
Ingredients:
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1 cup sugar
- 1 tsp vanilla extract
- 1 tsp salt
- 2 eggs
- 2 cups flour
- 1/2 tsp baking power
- 1 tsp baking soda
- 1 cup rolled oats
- 1 cup chocolate chip (I used semi-sweet)
- 2 cups rice crispy cereal
Instructions:
- In a large bowl add the butter, brown sugar, sugar, vanilla, and salt and beat on medium until fluffy.
- Add in the eggs and beat until smooth.
- In a medium bowl add the flour, baking powder, and baking soda and whisk together.
- Then add the dry ingredients to the bigger mixing bowl and beat until completely combined.
- Stir in the oats, chocolate chips, and cereal.
- cover the dough and refrigerate for about an hour.
- Once chilled and ready to bake, heat your oven to 350 degrees and prep your baking sheets with parchment paper.
- Using a medium cookie scoop, drop the dough on the baking sheets
- Bake for 10-12 minutes or until golden around the edges.
- Remove from the oven, let cool on the pan for about 5 minutes before moving to a cooling rack to completely cook.
