I made these cupcakes for our church Youth Group bake sale. They are easy to make and delicious!! The recipe makes 24 - I only needed a dozen so my neighbors got to indulge!!
Ingredients
- 3/4 cup butter, softened
- 2 1/2 cups sugar
- 3 eggs
- 1 15oz. pumpkin
- 2 1/3 cups flour
- 1 TB pumpkin pie spice
- 1 tsp baking power
- 1 tsp ground cinnamon
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp ground ginger
- 1 cup buttermilk
Frosting
- 8oz cream cheese, softened
- 4 cups confectioner's sugar
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees
- In a large bowl, cream the butter and sugar until light and fluffy
- Add eggs, one at a time, beating well after each addition
- Add pumpkin and mix well
- Combine the flour, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger and add to the sugar & butter alternately with the buttermilk - make sure to beat well after each addition
- Fill 24 paper-lined muffin cups 3/4 full.
- Bake for 20-25 minutes or of course until a toothpick interested in the center comes out clean.
- Cool for 10 minutes before removing from the pans to wire racks to cool completely
- In a large bowl beat the cream cheese and butter until fluffy.
- Add the confectioner's sugar, vanilla, and cinnamon and beat until smooth. I will tell you that I had to have my hand mixer on for a long time so be patient!!
- Once the cupcakes have cooled completely ice your cupcakes and enjoy!!!
