Pumpkin Spice Cupcakes with Cinnamon Cream Cheese Frosting

 


I made these cupcakes for our church Youth Group bake sale. They are easy to make and delicious!! The recipe makes 24 - I only needed a dozen so my neighbors got to indulge!! 


Ingredients
  • 3/4 cup butter, softened
  • 2 1/2 cups sugar
  • 3 eggs
  • 1 15oz. pumpkin
  • 2 1/3 cups flour
  • 1 TB pumpkin pie spice
  • 1 tsp baking power
  • 1 tsp ground cinnamon
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp ground ginger
  • 1 cup buttermilk 
Frosting
  • 8oz cream cheese, softened
  • 4 cups confectioner's sugar
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon


Instructions
  1. Preheat oven to 350 degrees
  2. In a large bowl, cream the butter and sugar until light and fluffy
  3. Add eggs, one at a time, beating well after each addition
  4. Add pumpkin and mix well
  5. Combine the flour, pumpkin pie spice, baking powder, cinnamon, salt, baking soda, and ginger and add to the sugar & butter alternately with the buttermilk - make sure to beat well after each addition
  6. Fill 24 paper-lined muffin cups 3/4 full.
  7. Bake for 20-25 minutes or of course until a toothpick interested in the center comes out clean. 
  8. Cool for 10 minutes before removing from the pans to wire racks to cool completely
For the frosting :
  1. In a large bowl beat the cream cheese and butter until fluffy.
  2. Add the confectioner's sugar, vanilla, and cinnamon and beat until smooth. I will tell you that I had to have my hand mixer on for a long time so be patient!! 
  3. Once the cupcakes have cooled completely ice your cupcakes and enjoy!!!
