Spinach & Chicken Pasta

 


This is a new recipe that I tried recently and everyone loved it. It calls for cooked bacon and I actually just bought microwave bacon and it worked just fine. You could also use a rotisserie chicken and shred it up instead of cutting up chicken. I used chicken breasts and cut them into cubes. It was super easy to put together before the kids came home from school and we were able to sit down for dinner pretty quickly. If you are an on-the-go family, this is a quick meal for you. Ingredients

  • 2 Tablespoons olive oil
  • 1.5 lb boneless skinless chicken, cut into 1-inch chunks
  • One packet of dry Ranch Dressing mix
  • 1 lb box of rotini pasta, uncooked
  • 4 cups low sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 8 oz block Cream Cheese
  • 5 ounces baby fresh spinach
  • 8 slices cooked bacon, crumbled


Instructions

  1. Pour olive oil into Instant Pot and select Saute. Heat for 1 minute
  2. Add the diced chicken and sauté for approximately 5 minutes or until no longer pink
  3. Add Ranch dressing packet and stir to combine well. 
  4. Add pasta on top of the chicken and pour chicken broth over pasta (do not stir pasta in broth)
  5. Place the lid on the Instant Pot and turn the steam release handle to the sealing position
  6. Set on “Manual or High Pressure“ for 4 minutes
  7. When the timer goes off, turn the steam release handle to the venting position and wait for it to be done releasing. 
  8. Stir in cream cheese, shredded cheese, bacon, & spinach, and stir until cheese is melted.

This makes a lot so you may have leftovers depending on how many people you are feeding.

Mexican Street Corn

  I've modified this recipe based on my family's tastes. Here is the link to the original recipe I follow: https://www.loveandlemons.com/mexican-street-corn-salad/ Below is what I do:  Ingredients:  4 cans corn - whole kernel (drained) 6oz feta cheese 3 garlic cloves - minced 2TB jalapeno, finely chopped 4 TB mayonnaise 1 tsp chili powder juice from half a lime salt & pepper to taste Instructions Add olive oil to skillet over medium heat. Add corn and let cook until corn starts to char. Stir often - will take about 10 minutes In a large bow, mix together mayonnaise, cheese, lime juice, peppers, garlic & chili powder. When corn is done, fold it into other ingredients. Taste for seasoning. Add salt & pepper to your taste.  You can serve it immediately or put it in the fridge for when you are ready to enjoy. 

Mommy Waffles

  Mommy Waffles One day my oldest wanted breakfast and I asked him what he'd like. He said, "Mommy waffles". I just about died it was the sweetest thing. I had made homemade waffles just a few times for us and they were so good!! I used my waffle iron so much I had to buy a new one. Ingredient List: 2 eggs 2 cups all-purpose flour 1 3/4 cups milk 1/2 cup vegetable oil 1 tablespoon white sugar 4 teaspoons baking powder 1/4 teaspoon salt 1/2 teaspoon vanilla extract  Instructions:  Heat up your waffle iron Mix all the dry ingredients together in a bowl Mix all the wet ingredients together in a separate bowl Whisk all the ingredients together until nice and smooth Use a 1/4 or a 1/2 cup of batter for your waffles when the iron is nice and hot.
