Cheesy Broccoli, Chicken, and Rice

 


Here's another quick meal for the Instant Pot. Broccoli, Chicken, and Rice - what could go wrong?!? My family loved this meal and it made a lot so we had it for lunches too. 


Ingredients:
  • 1lb boneless, skinless chicken breast
  • 3 cups water
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 cups long grain white rice
  • 2 cups milk
  • 3 cups chopped broccoli florets
  • 15 oz salsa con queso
  • 1 cup shredded mozzarella and cheddar cheese blend
  • 1/2 cup shredded parmesan cheese


Instructions:
  1. Cut chicken breasts into approximately 1 inch chunks
  2. Set Instant Pot to Saute Less 7 minutes and add a dab of margarine or butter to the pot.
  3. Add the chicken breast chunks to the pot and leave them to cook, stirring occasionally, until the Instant Pot turns off.
  4. The chicken will still be slightly pink when the Instant Pot turns off.
  5. Add the water to the pot with the chicken and scrape the bottom of the pot well to make sure nothing is sticking.
  6. Add the salt, pepper, onion powder and garlic powder to the pot. Do not stir.
  7. Add the rice to the pot.
  8. Gently push the rice around until it is all submerged in the water but do not stir.
  9. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 6 minutes.
  10. When the timer goes off, turn the steam release handle to the venting position and wait for it to be done releasing.
  11. Remove the lid from the Instant Pot and stir the contents.
  12. Add the milk, broccoli florets and salsa con queso to the pot.
  13. Stir well and set the Instant Pot to Saute Less for 5 minutes.
  14. Leave the dish to continue cooking, stirring occasionally, until the Instant Pot turns off.
  15. Add the shredded mozzarella and cheddar cheese blend and the shredded Parmesan cheese to the pot, stir until mixed well and you are ready to serve!

Mexican Street Corn

  I've modified this recipe based on my family's tastes. Here is the link to the original recipe I follow: https://www.loveandlemons.com/mexican-street-corn-salad/ Below is what I do:  Ingredients:  4 cans corn - whole kernel (drained) 6oz feta cheese 3 garlic cloves - minced 2TB jalapeno, finely chopped 4 TB mayonnaise 1 tsp chili powder juice from half a lime salt & pepper to taste Instructions Add olive oil to skillet over medium heat. Add corn and let cook until corn starts to char. Stir often - will take about 10 minutes In a large bow, mix together mayonnaise, cheese, lime juice, peppers, garlic & chili powder. When corn is done, fold it into other ingredients. Taste for seasoning. Add salt & pepper to your taste.  You can serve it immediately or put it in the fridge for when you are ready to enjoy. 

Mommy Waffles

  Mommy Waffles One day my oldest wanted breakfast and I asked him what he'd like. He said, "Mommy waffles". I just about died it was the sweetest thing. I had made homemade waffles just a few times for us and they were so good!! I used my waffle iron so much I had to buy a new one. Ingredient List: 2 eggs 2 cups all-purpose flour 1 3/4 cups milk 1/2 cup vegetable oil 1 tablespoon white sugar 4 teaspoons baking powder 1/4 teaspoon salt 1/2 teaspoon vanilla extract  Instructions:  Heat up your waffle iron Mix all the dry ingredients together in a bowl Mix all the wet ingredients together in a separate bowl Whisk all the ingredients together until nice and smooth Use a 1/4 or a 1/2 cup of batter for your waffles when the iron is nice and hot.
